Chocolate Pudding

IMG_7725This is the best mousse, plus I can feel good about eating it and giving it as a treat to my kids. If you use dates, soak them in hot water or be sure they are really soft. Once they are soft, you also need a really good food processor or blender for it to be convincingly smooth. If you are worried about that, use Sucanat or natural whole cane sugar.

  • 1 avocado
  • 1/2 cup strained almond milk (1 cup almonds in 1 cup milk, blended)
  • 4 tablespoons Cocoa powder
  • 6 pitted dates (soft!), or 4 tablespoons Sucanat
  • 1/2 teaspoon vanilla extract

Puree all of the ingredients together in a food processor. Spoon into 1/4 cup ramekins and chill for at least an hour. Enjoy with berries and whipped thick yogurt.

I often quadruple this recipe so we have enough for a few desserts for four of us. I use:

  • 4 avocados
  • 2/3 cup coconut milk (1 cup unsweetened coconut meat in 1 cup water, blended and strained)
  • 1 cup (heaping) Cocoa powder
  • 1 cup Sucanat
  • 2 teaspoons vanilla extract

Puree all of the ingredients together in a blender. I also like to add pinches of ground cardamom, nutmeg, cinnamon, or cayenne. Spoon into 1/4 cup ramekins and chill for at least an hour. Enjoy with berries and whipped thick yogurt.
